This keto pie recipe is an ideal choice for anyone looking for healthy, low carb meals. The combination of spinach, ashwagandha powder and plantain husks is not only rich in fiber, but can also support digestion and help strengthen the immune system.

Keto pie with spinach, ashwagandha and plantain husks
Ingredients (for a pie with a diameter of approx. 20 cm)
- 120 g almond flour
- 2 tbsp. psyllium husk
- 1 egg
- 50 g butter or coconut oil
- ½ cup water
- 1 pinch of salt
This goes into the filling
- 200 g fresh spinach (or thawed frozen, squeezed well)
- 150 g ricotta
- 2 eggs 50 ml cream (30%, sugar-free)
- 40 g grated parmesan or mozzarella
- ½ tsp. ashwagandha powder
- 1 clove garlic, finely chopped
- salt, pepper, nutmeg to taste
Preparation
- Mix the almond flour, psyllium husk and salt, then add the water, egg and melted butter or coconut oil. Knead the dough and press it into a greased pie dish. Pre-bake at 180 °C for approx. for 10 minutes.
- Stir-fry the spinach with a little oil and garlic, then season.
- In a bowl, mix the ricotta, eggs, cream, cheese, ashwagandha powder and spices, then add the spinach.
- Pour over the pre-baked pastry and bake for a further 20-25 minutes at 180°C until the top is golden brown.
