Ginger is available both fresh and dried. Ginger spice is made from the dried root of the plant. The rhizome, i.e. the knotty, thick, beige underground stem, is essential for the plant as it stores nutrients. To prepare chopped and sieved ginger, the whole, fresh organic ginger root is sliced lengthwise, dried, and then cut into small pieces. The grains are yellow-beige in color and have a fragrant, spicy, citrusy, fiery taste.
