Chicken Breast with Spinach and Sun-Dried Tomatoes

Protein-rich chicken breast can easily be topped with fresh spinach and organic sun-dried tomatoes for a nutritious, tasty, and vitamin-rich meal. Spinach is an excellent source of magnesium, and dried tomatoes are rich in lycopene, as well as vitamins C, A, and K, making this dish both delicious and healthy.

Chicken breast with spinach and dried tomatoes
Ingredients (serves 3-4):
- 4 chicken breast fillets
- 100 g fresh or frozen spinach leaves
- 40-50 g organic dried tomatoes
- 150 g mozzarella (preferably light)
- 2 cloves garlic
- 1-2 tablespoons olive oil
- Salt, pepper to taste
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- ½ teaspoon chili powder (optional)
- toothpick or skewer for securing
Preparation suggestion
Briefly fry the chopped garlic in olive oil, then add the spinach and simmer until done. Score the chicken breasts, season and fill with spinach, sun-dried tomatoes and cheese. Secure the opening with a skewer or toothpick, then bake at 180 °C for approx. 40 minutes until golden brown. It is worth covering it with aluminum foil for the first 20 minutes. The finished dish is served with quinoa, bulgur or other healthy side dishes for a complete, Mediterranean-style meal.
