Spring Radish Salad with Black Cumin Seed Oil Dressing

Spring radish salad with black cumin seed oil dressing
Ingredients (for approx. 4 servings)
For the salad:
- 3 handfuls of mixed salad leaves (e.g. arugula, bird's lettuce)
- 2-3 bunches of radishes (approx. 400 g) thinly sliced sliced
- 1 small snake cucumber, sliced
For the dressing:
- 2 tablespoons organic black cumin seed oil
- ½ tablespoon freshly squeezed lemon juice
- 1 teaspoon honey or maple syrup
- 1 teaspoon whole mustard seeds
- 1 clove garlic (grated or minced)
- Salt, freshly ground pepper, and nutmeg to taste
Preparation
Arrange the salad in a bowl and drizzle with the fresh black cumin seed oil dressing. Toss gently to coat all ingredients evenly. The radish salad is filling on its own, but it can also be served as a complete, figure-friendly lunch when complemented with grilled chicken breast.
