Vegan Curry Omelette

This vegan curry omelette is made with pea protein powder, which is an excellent source of the essential amino acid methionine. Vegan curry omelette
Ingredients (serves 3-4)
- ¾ cup pea protein powder
- 1.5 teaspoons baking powder
- 1 dl water
- 2-3 dl plant-based milk
- 1.5 teaspoons curry
- 1 pinch nutmeg
- 2 tbsp. olive oil
- salt, pepper and garlic powder to taste
Preparation suggestion
Mix the dry ingredients in a bowl, then gradually add the wet ingredients to obtain a lump-free, thick pancake batter-like mixture. Pour olive oil into a frying pan, then fry the omelette until golden brown. When serving, you can enrich it with spinach, sautéed mushrooms or grilled vegetables.
