Macaron with spirulina and pistachios

Macaron with spirulina and pistachio for Christmas guests
Ingredients (for approx. 12 pieces)
- 60 g almond flour
- 3-5 g spirulina powder
- 60 g egg whites (approx. 2 pieces)
- 70 g xylitol
- 1 small pinch salt
For the filling:
- 50 grams of finely ground pistachios
- 20 g almond flour
- 30 g xylitol
- 20 g melted butter
- 120 g mascarpone
Preparation
It is worth mixing the almond flour, xylitol and spirulina powder in a food processor until smooth. Beat the egg whites with the salt until stiff, then gradually add the xylitol until you have a shiny and thick mixture. Then carefully fold in the almond flour and spirulina.
Divide the mixture into 12 equal parts and use a piping bag to form discs on a baking sheet lined with baking paper. Let it rest for a few minutes, then bake at 160 °C for approx. 10–15 minutes.
For the filling, mix the dry and then the wet ingredients first to get a homogeneous cream. Fill the cooled macarons with this.
