Christmas cupcake with acai berry cream

Ingredients (approx. 12 cupcakes)
For the dough – dry ingredients:
- 150 g oat flour
- 50 g almond flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- 1 pinch salt
For the dough – wet ingredients:
- 2 large eggs
- 150 g plain Greek yogurt (1.5–2% fat)
- 80 ml coconut oil
- 80 ml almond milk or other plant-based drink
- 3 tablespoons erythritol (to taste)
- 1 teaspoon vanilla extract
For the acai berry cream:
- 250 g plain cream cheese (light version is also suitable)
- 1 tablespoon acai berry powder
- 1–2 tablespoons erythritol
- 1 teaspoon freshly squeezed lemon juice
Preparation in brief
Preheat the oven to 180 °C. Mix the dry ingredients thoroughly in a bowl and the wet ingredients in another bowl, then mix the two mixtures into a homogeneous mass. Pour the batter into a muffin tin lined with muffin papers, fill it about ¾ full, and bake for 20–22 minutes.
For the cream, mix the cream cheese with erythritol until smooth, then add the acai berry powder and lemon juice. After a short cooling, the cream becomes easy to decorate.
