Indian-inspired savory pancakes with moringa
Ingredients (makes about 6-8)
- 1 cup chickpea flour
- 1 tablespoon moringa powder
- 1 egg
- 1.5 tsp. baking powder
- 1.5-2 cups coconut milk
- ½ teaspoon ground curry
- ¼ teaspoon ground coriander seeds
- Salt, pepper to taste
- Chilli flakes to taste (if you can handle it)
Preparation suggestion
Mix the chickpea flour, moringa powder and spices, then add the egg and coconut milk to get a thick, pancake batter-like consistency. It is worth putting the mixture in the refrigerator for half an hour to rest. Fry in a pan and serve with steamed vegetables, chutney or yogurt-herb dressing.
