Preparation
Dissolve one tablespoon of matcha powder in 50 ml of hot water, then add another 150 ml of water. Soak the sponge cakes in this and layer them in a bowl or cake tin.
For the cream, beat the egg whites until stiff and mix the yolks with the sweetener, rum flavoring, and ½ tablespoon of matcha powder. Finally, carefully fold it into the mascarpone, then spoon it onto the sponge cake. Sprinkle the top with matcha powder as a decoration. It is worth resting in the refrigerator for a few hours before eating.
