Christmas Cinnamon Rolls with Coconut Sugar

This fragrant, spicy Christmas cinnamon rolls is a great choice for the holiday season, especially when classic cookies are running out. The harmonious combination of whole grain flour, coconut sugar and carefully selected Christmas spices results in a homemade cookie that is not only delicious, but also a more conscious alternative to traditional cinnamon rolls. Ingredients (for about 10 pieces)
For the dough:
350 g whole wheat flour (or half whole wheat, half spelt flour)
7 g instant yeast
200 ml lukewarm plant milk (e.g. almond milk or oat milk)
50 ml coconut oil
1 egg
2 tablespoons coconut sugar
1 pinch salt
For the filling:
50 ml coconut oil
4 tablespoons coconut sugar
1 tablespoon ground cinnamon
½ teaspoon ground ginger
a little ground cloves and/or anise
Preparation in brief
Mix the dry ingredients together, then add the lukewarm plant milk, egg and coconut oil. Knead into a soft, elastic dough, cover and let rise in a warm place for about an hour.
For the filling, mix the coconut oil with the coconut sugar and spices. Roll out the risen dough, brush with the spice mixture, roll it up and then slice. Bake in a preheated oven at 180 °C for 18–20 minutes until golden brown.
